Ingredients

1 eggplant
Mayonnaise
Basil
Breading (we use rice flakes)
Salt
For the batter: 1/2 tsp coriander
1/2 tsp asafoetida
1/3 tsp black pepper
1 tsp mustard
Soy sauce
Water
2/3 smoked paprika
1 tsp sugar
4 tbsp pea flour
1 tbsp corn starch
2 tbsp green buckwheat flour
This recipe for Fried Eggplant Octopuses is a unique and creative take on a classic fried eggplant dish.

Instructions

1.We cut the eggplant lengthwise, and then we cut each part not all the way to the end, so that we get octopuses.
2.Then pour water into the pan and add salt.
3.Bring to a boil and add eggplants there. Boil for another 2-4 minutes and remove.
4.Mix all the ingredients for the batter in a separate bowl and dip the eggplants in it, then roll them in breading.
5.In corn oil and low heat, fry on both sides until golden brown.
6.For the sauce, you can mix myonnaise with basil.
7.Ready !

The key to the dish is the preparation of the eggplant, where it is cut lengthwise and then not all the way through, creating an octopus-like shape. This not only adds visual interest but also allows for more surface area to be coated in the delicious batter and breading.
